  • Add the milk mixture to the dry ingredients and stir with a spatula until mostly combined, leaving just a few streaks of dry flour. Then, carefully fold the blueberries into the batter without overmixing.

Troubleshooting Tips for Perfect Blueberry Bread

Bread is too dense or heavy
This usually happens if the batter is overmixed. To avoid this, mix until just combined—you should still see a few streaks of flour in the batter. Overmixing can activate the gluten and result in a denser texture.

Blueberries sank to the bottom
To keep the blueberries evenly distributed throughout the bread, toss them in a little bit of flour (from the dry ingredient mix) before folding them into the batter. This helps prevent them from sinking during baking.

Bread is too dry
If the bread turns out dry, it might have been baked for too long or the ingredients weren’t measured correctly. Check the bread with a toothpick around the 65-minute mark, and remove it from the oven once the toothpick comes out with just a few moist crumbs, not dry.

Bread didn’t rise as expected
If your bread didn’t rise enough, it could be due to expired baking powder or baking soda. Double-check that your leavening agents are fresh and still active.

Bread is too crumbly
Overmixing the batter or using too much flour can cause crumbling. Be sure to measure your flour correctly (spoon it into the measuring cup and level it off). Also, avoid overmixing, as this can make the bread too dry and crumbly.

Bread is too sweet
If you find the bread too sweet for your taste, you can slightly reduce the sugar in the recipe. Try cutting it back by ¼ cup to create a more balanced sweetness.

The top is too dark or burnt
If the top is getting too dark before the bread is fully baked, you can tent it with foil halfway through baking to prevent over-browning while the center continues to cook.
